Conchiglie Ripiene (Stuffed Shells)

Giant fresh pasta shells, filled with creamy ricotta, fresh spinach, and provolone, snuggled into a roasted tomato and basil sauce and finished with parmigiano and pecorino. This is comfort on a plate, with no cleanup.
